PALEO SCOTCH EGG
I got this recipe from the website Mark's Daily Apple and loved how it was a Paleo Scotch Egg. So today my daughter & I decided to get it done.
INGREDIENTS (I used)
4 hard boiled eggs
2 tablespoons olive oil
Small onion finely chopped
1/2 lb (226 g) beef mince
1 lb (453 g) pork mince
Masterfoods mixed herbs
Masterfoods mixed spice
Salt & pepper
1 raw egg
INSTRUCTIONS:
- Pre heat oven to 163 deg C
- Heat oil over medium heat and saute onion until soft.
- In a large bowl combine onion with other ingredients add raw egg and mix well with hands.
- Separate meat into 4 even portions roll each portion into a ball then flatten into thin patty. Put a boiled egg in middle and fold meat over the egg and shape with hands until egg is hidden.
- Bake uncovered for 35 mins
- Remove and rest for 10 mins.
On the website it says serves 4 but I would even stretch it to 6-8 as they are filling. I hope you try and enjoy :)
